Spinat Og Ost "frittatas"
Kjempefin lunchmat - skal oversette den til norsk senere !!
Spinach & Cheese Mini Frittatas
1 package (300g/10oz) of frozen chopped spinach (NB tines til værelsetemperatur !!!!!)
240 ml (1 cup) cottage cheese OR 170ml (0.7 cup) crumbled feta cheese (smuldret masse - viktig !!) (Jeg bruker feta, den har høyere fett og siden cottage cheese ikke er lov på induksjonen)
130g (4.6oz) grated/shredded cheddar or gouda cheese
60g (4 tbsp) grated parmesan or pecorino cheese
6 medium eggs
95ml (0.4 cup) chopped parsley
1 tsp each of basil and oregano, crushed
salt & Tabasco (chili pepper) sauce to taste
Jeg lager de og med baconbiter i.......knallgodt !
Grease 12 muffin cups (American sized) (De har papirformer på rema/rimi) with 0.5 tbsp olive oil, heat oven to 190C (375 F)
Whip eggs slightly. Add parsley and spices. Then stir in spinach and cheese.
Spoon about 3-4 tbsp mixture into greased muffin cups. Bake for 18-20 minutes, or until a knife inserted in the middle of the frittata comes out clean. Let stand 5 minutes and serve, with salsa and sour cream to taste.
